Roasted Winter Veggie Tacos

Homemade tortillas stuffed with roasted vegetables from the farm just down the road. The potatoes and cauliflower served as the “meat,” verza (savoy cabbage) in lieu of shredded cabbage, and the fennel bulb instead of onion. Everything roasted and sweet and delicious.

We washed it down with some of our own rosato… absolutely hit the spot!
